The

of autumn's arrival. It signals the end of the growing season
and cooler days ahead. Let the harvest moon light up a table
set for a romantic dinner, an early fall feast with friends,
or an evening spent sharing a special meal with family.

Pork Sandwiches
Ingredients:
- 2 pork tenderloins (equaling approximately 1 ½ pounds)
- 1/3 cup of your favorite barbeque sauce
- ½ cup horseradish
- 4 pita bread rounds, cut in half
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup thinly sliced romaine lettuce
- 1 cup tomato, chopped
Directions:
Preheat oven to 400 degrees F. Place pork tenderloins in roasting
pan and brush with barbeque sauce. Bake tenderloins for 15
minutes or until internal temperature reaches 155 degrees
F. Remove from oven, cover with foil and let rest for 15 minutes.
In the meantime, slice other ingredients. Slice pork across
the grain. Spread horseradish on pita bread and stuff with
pork. Garnish with other ingredients.
